At the weekend I did exactly the same with gooseberries (of which we also have a glut) and it was fabulous. Thanks for the idea of using blackcurrants, it will save us making another 20lb of jam!
I also made blackcurrant cordial - like Ribena only tangier, tastier and much less sweet. And it freezes well too. I used the BBC's recipe for elderflower cordial - http://www.bbc.co.uk/food/recipes/database/elderflowercordial_6465.shtml - omitting the lemon and orange and using a couple of pounds of cooked currants instead of flowers.

I L-O-V-E blackcurrant fool--always have it with the first of the new season berries. Homemade Ribena is also another great way to use um up. But if life gives you blackcurrants, why not parfait? http://podchef.motime.com/post/470693
