I've a most delicious way of eating rhubarb: it's dead simple, just take a few sticks (doesn't matter how green they are, they certainly don't need to be forced rhubarb), and get your hands on a jar of ginger preserved in syrup - you often find them in Chinese shops and most supermarkets. They just chop the rhubarb into chunks and add a couple of balls of the ginger, cut into slivers, along with a few teaspoons of the syrup, and simmer until the mixture's soft. Then eat as it is or with a scoop of vanilla ice cream or some greek yoghurt. The rhubarb and ginger flavours work together perfectly, and the sugar in the syrup removes any harshness from the 'barb.
It's so good it had me licking out the saucepan.
mmm, sounds delicious. I love rhubarb and ginger, so it's perfect for me! I think my favourite thing to do with rhubarb has to be rhubarb rolls....think of sausage rolls, and then substitute the sausage with rhubarb. When I was at school, I used to sit next to a girl whose Mum made these for packed lunches...they were sooo scrummy.

I can't wait for my rhubarb....and my favourite way to eat it is just as my grandma used to give me when I was a kid. A stick of rhubarb and a brown paper bag with some sugar in! Yum Yum!

ooh, I remember doing that ... although I prefer to cook the tougher stems.
