Eating fresh peas, stripped straight from the pod fresh of the plant, is one of the summer's greatest pleasures for me. Very few of the peas pictured here will actually make it to the steamer: most of them end up raw in salads, or eaten absent-mindedly while down at the allotment. And I wouldn't have it any other way, although I must get around to making the Italian classic, risi e bisi, some time this summer.
